The honey colored wood stems from the air drying process that allows the French oak slabs to loose most of their moisture content in a gentle way compared to kiln drying which extract moisture rapidly within days. Kiln dried oak lumber also tends to be lighter in color compared to the simple air drying technique. Some of the French oak boards exhibit a weathered grey patina on the back side, another sign of air drying.
